Re: What's for dinner?

For dinner tonight I have brined a chook. I have left it a little late but to speed things up . I cleaned one of the syringes I used to vaccinate my lambs, ""I buy them preloaded from a rural vet"" Then injected the chook with the brine mixture, It felt a little creepy I will confess, Then I will smack it on the webber wanabe for a little scorching then dampen it down to smoke for a while, I purchased a pork belly on thursday which i am curing with some of my honey and some pink russian salt, I will smoke it tomorrow , it will make for a nice bit of bacon. It wont colour up like the commercial stuff, But will taste good..

We had garlic chicken breasts with leftover tabbouli and hummus and a baked spud with sour cream and chives but I passed on the spud.
