Mushroom Sauce:

Half an onion chopped up well
5 mushrooms, sliced
1 cup chicken stock
1/2 cup white whine
1T cornflour
2T sour cream


I fry up the onion and mushrooms for a few mins, stirring, then add the stock and white wine, let it cook for a few mins over medium heat.  (Another few mins).

Add the cornflour to thicken the sauce up, mix to get rid of lumps and then add sour cream at the end.  (Add salt and pepper too at this stage).

If I am in a rush, I get the Gravox packet mushy sauce, and just add some fresh mushys and a bit of cream at the end...this is a great sauce with a nice steak and some fettucine on the side.

Here's a good one Steve for prawns, but you could use it on any seafood or even chicken or pork I would think.

1/4 cup lemon juice
2 cloves crushed garlic
1 tbs chopped fresh oregano
1 tbs chopped fresh chives
1/3 cup olive oil
1/4 cup dry white wine
1 tsp finely grated lemon rind

Chuck it all in a jar, screw on the lid and shake that thang!!
Put your meat of choice in a single layer in a suitable dish, pour over the marinade, cover and put it in the fridge.  It does have lemon so I wouldn't leave it overnight personally, an hour or two would be plenty.

I will post some more for you in the next day or two, but right now the couch is calling my ass!

No don't soak it in heaps, it will be way too much, don't over do the garlic/rosemary either, just enough to give it a kick.  You still want to taste the meat.

When you say cover the meat do you mean submerge the meat in 
it or cover the surfaces and flip it in the marinade ?

Make up a nice soft polenta to serve underneath it- and you will be wrapped!

Doesn't take long, just use the instant stuff.

Nothing too expensive for marinades, it's a waste, tis better to drink it lol.

Just enough to cover the meat, and turn it every so often while it's in the marinade.

Do it for a few hours or in the fridge over night.

I don't use a lot of marinades or it can over power the meat - but usually red wine, garlic, a few drops of good quality olive oil and a bit of fresh rosemary is all you need.

Please do I would appreciate it.

I tried a marinade from costco it wasn't overpowering and was nice
but I was hoping for a bit more explosion of flavor with it.

I think you have to make the marinade yourself fresh and not use the bottled stuff.

I'm gonna try the ones in here next.

For lamb steaks, or indeed lamb of any kind on the BBQ just mix together a little bit of olive oil, a couple of teaspoons of grainy mustard, a crushed garlic clove, some black pepper and some finely chopped mint.  If you don't have or don't like mint, use rosemary instead.

You can marinate it for just an hour or two or overnight if you want.

Just remember that any marinades that contain lemon or lime will begin to cook the meat so you don't want to marinade anything for more than an hour or two if you're using citrus juice.

my marinades usually consist of a bit of garlic, soy sauce, blackus (worstershire) p & s bit of wine and whatever sauces we feel fit...eg barbie, tomos or what ever.

But if doing meat skewers I usually use the French island dressing for the marinade.

For chicken I use the first one or buy a pkt mix.

Oh and they are best left over night.

Steak Marination Sauces

OK I have been to some BBQ's and the steaks have been marinated over night
and they taste out of this world.

Does anyone have any good Steak marination recipes for marinating steaks ?
I smash the flavor in on the fly using various sauces and herbs.

The over night marinations seem the best.

I marinated a beautiful rib eye once in red wine over night and totally destroyed the 
sucker.

I am BBQing all week with the new 6 burner beast.
So if you have any recipes for over night marination post them here please.
