Hey Grannie, so glad you tried it and it was good xx. With the 2 ingredient chocolate cake I have read that cherry Coke etc goes well. Fanta too. Here's another 2 ingredient wonder but I am going to try it with a tin of pie apples instead of the lemon filling





2 Ingredient Luscious Lemon Cake
Ingredients for cake:
1 (1 lb) package of angel food cake (I used Western Family brand)
1 (15.75 oz) can of lemon pie filling (I used Wilderness brand- made by Duncan Hines)

Topping:
Fresh Strawberries, if desired
Whipped Cream

In a bowl, combine the cake mix (Mine had two packets inside, just add both) and the pie filling. Spread the cake batter into a a 9×13 cake pan.
Bake 350 degrees for 20 minutes or until a toothpick inserted in the cake comes out clean. Cool and slice. Top with fresh berries and cream.

Hey Rumi..I think I will give that last recipe a try one night ..would be an easy no fuss dish to make when theres just me here at home .. as I cook heaps the nights my guy is over or the family visits ..

Ingredients
Makes 12 Servings

1 (18.25 oz) box moist-style dark chocolate cake mix
1 (12 oz) can club soda

Directions
Preheat oven to 350° F. Spray a 9-inch by 13-inch baking pan with nonstick spray. In a large bowl, whisk cake mix with soda until smooth. Pour into the pan. Bake until a knife inserted into the center comes out clean, 30 to 35 minutes. Slice and enjoy!

Chocolate and Raspberry/Strawberry Mousse Cake

(I don't really like Raspberries so I do it with Strawberries. It looks fiddly but it's not and well worth a try)

Chicken with creamy lemon sauce

I usually slice my chicken breasts in half so they are thinner and cook through quicker. Coat chicken with seasoned flour and cook over medium heat a few minutes each side. Remove from pan and keep warm.

Heat 1 tbsp butter and add two cloves of crushed garlic and cook for a minute or two. Add half a cup of chicken stock, half a cup of cream and quarter cup of lemon juice (I usually use a little less than that) - bring to the boil and a reduce a little.

Just before serving, add finely chopped basil (or chives, or parsley or whatever herb you like), salt and pepper to taste and pour sauce over chicken. Serve with vegies of your choice.

Sausage Pie

- olive oil
- 1 brown onion, grated or chopped finely
- 6 thin beef sausages
- 1 carrot, grated
- 2 zucchini, grated
- 1 cup grated tasty cheese
- 1/2 cup plain flour
- 1 1/2 cups milk
- 3 eggs

Preheat oven to 160 degrees. Grease a baking dish.

Heat olive oil in frying pan over medium heat. Add onions and cook for a couple of minutes until soft. Transfer to a bowl. Put your snags in the frying pan and cook, turning, for a few minutes until cooked through. Thinly slice.

Arrange sausages, onion, carrot, zucchini and cheese in your baking dish.

Whisk flour and milk in a bowl until smooth. Add eggs, season with salt and pepper. Whisk to combine and pour over ingredients in baking dish. Bake for 50 to 60 minutes until set. Stand for 5 minutes before serving.

WOW Annie, I've been doing that Apple Slice recipe for years and years. Only difference is I always use a butter cake mix and don't use an egg in the topping. Sonny loves it.

Yes I will do that. Will have a look in my "bible" (my kitchen folder I've made up over the years with recipes from magazines, other people and just made up ones) over the weekend and post a couple of things.

If anyone tries them I would love to know how it goes and what they thought. Next time when I do pumpkin soup I will follow your recipe and let you know what I think.

Apple Slice

Base-
1 pkt plain cake mix
125g melted butter
1 C coconut

Topping-
425g tinned pie apples
1 carton light sour cream
1 egg - beaten
cinnamon and nutmeg

1. Preheat oven 180
2. Mix base ingredients together and press into greased and lined slice tin. Bake for 10 minutes then allow to cool.
3. Mix apples and sour cream together then add beaten egg. Mix well
4. Spread over cake base. Sprinkle with cinnamon and nutmeg and cook til topping is set.

The Easiest Dessert Ever

4 eggs
2 C milk
1 C sugar
1 C coconut
1/2 C SR flour
1/4 margarine
1 tsp vanilla essense


1. Preheat oven 160 degrees (fan forced)
2. Mix everything in a blender
3. Pour into flan dish
4. Cook for about 45-50 minutes.

ROASTED PUMPKIN SOUP - for Yodas Very Happy

1 medium butternut pumpkin - cut in half
Ground pepper to taste
6-8 sprigs of lemon thyme (which I didn't use)
2 onions - cut in half
4 C chicken stock


1.Preheat oven 200 degrees.
2.Scrape seeds from pumpkin, place thyme and pepper in cavity and place in baking dish skin side up with onion and a drizzle of olive oil.
3.Cook for 45 minutes or til tender. Allow to cool.
4.Peel off skin and place pumpkin and onion in blender with stock and blend til smooth (I did it in 2 batches coz my blender is only small)
5.Pour into saucepan and reheat. Season well. YUM!

I didn't use the lemon thyme. I think I chucked a couple of garlic cloves in the baking dish with the pumpkin and onion.
